RANCH STYLE HAM POTATOES 
1 slice fully cooked smoked ham, about 1 1/4 lb.
2-3 tbsp. prepared mustard, Grey Poupon preferred
4 med. potatoes, peeled and sliced
2 med. onions, thinly sliced
1 tbsp. butter
Dash of salt
Dash of black pepper
1/2 c. chicken broth
1/2 c. milk or half and half
4 tbsp. grated sharp cheese
3-4 tbsp. chopped parsley (optional)

Grease a 1 1/2 quart baking dish. Saute onion in butter until soft but not browned. Place half of the potatoes in a thin layer in the bottom of the baking dish. Cover with half the onion. Place ham on top. Spread with mustard (ham can be cut and layered in pieces). Cover with remaining onion. Sprinkle with salt and pepper. Cover with potatoes. Add broth. Bake at 350 degrees for about 40 minutes. Add milk. Sprinkle cheese on top. Continue baking at 375 degrees until potatoes are tender and cheese is melted, about 15 minutes.
