GRAHAM CRACKER CHEESE PIE 
4 (3 oz.) pkgs. cream cheese
3/4 c. sugar
Pinch of salt
2 eggs (if making 2 pies, add extra egg)
1/2 tsp. vanilla
1 graham cracker pie crust (make one or buy Johnson's 9" crust)

Use electric mixer; let cream cheese soften in a large bowl; beat in sugar and salt until fluffy. BY HAND, add eggs, one at a time, beating well after each addition. Beat in vanilla. Pour into crumb crust. Bake at 350 degrees for 50 minutes or until firm in center. Remove from oven and let stand in room temperature until cool. Refrigerate. (To vary, use a chocolate crust.) Easy! Easy!
