EASY LEMON CHICKEN 
4 boneless chicken breasts
1/2 c. flour
1 tsp. salt
1 1/2 tsp. black pepper
1 stick butter
1 1/2 c. fresh sliced mushrooms
1/2 c. chopped scallions
2 tbsp. capers
1/4 c. lemon juice
1/4 c. water

Pound out chicken breast to tenderize. Mix flour, salt, and pepper together. Flour chicken with above mixture. In large frying pan melt butter over medium heat and brown chicken until golden brown, 5-7 minutes. Remove chicken from pan. Keep warm.

In frying pan add mushrooms, green onions and capers, lemon juice and water. Saute until tender. Remove sauce from pan and place chicken breast bake in pan and cover chicken with sauce. Simmer on low 15 minutes. Serve with rice. Serves 4.
