SPINACH QUICHE 
3/4 c. shredded sharp Cheddar cheese
3/4 c. shredded Monterey Jack cheese
4 slices bacon
6 oz. lean sausage
1/4 c. diced onion
5-6 mushrooms, sliced
1 pkg. (8-10 oz.) fresh spinach or 1 pkg frozen spinach
1 tbsp. flour
4 eggs
1/2 c. milk
salt, pepper, nutmeg to taste
1 Pillsbury refrigerated pie crust

Sauté sausage and drain on paper towel. Sauté bacon, drain and crumble. Sauté mushrooms and onion. Microwave spinach on high 4 to 6 minutes, drain well and chop. Add 1 Tbsp. flour. Mix all ingredients in large bowl. Pour into pie crust.

Bake at 400°F for 15 minutes. Reduce heat to 350°F and bake additional 15 minutes.

Yield: 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
