SPINACH AND SAUSAGE QUICHE 
1/2 lb. crumbled hot sausage, cooked and drained
1/4 to 1/2 lb. Provolone cheese, cubed
2 tbsp. Parmesan cheese
3 lg. eggs, well beaten
1 pkg. frozen spinach, chopped
1 c. milk
1 pie crust

Thaw spinach, saute in garlic and oil. Sprinkle sausage on crust, then add provolone. Pour eggs over provolone, then add milk. Spoon spinach over top. Sprinkle with Parmesan cheese. Bake 1 hour at 350 degrees.

Great Quiche! Made it for Christmas breakfast. I used cheddar cheese instead of provolone and I added salt, pepper, onion powder and parsley flakes. Gave it 4 stars because I needed to add seasonings that weren't listed on the recipe. Next time I make it I will use fresh mushrooms too.
