SPINACH QUICHE 
9" Pillsbury pie crust
1 box frozen chopped spinach or (1 1/2 c.) fresh spinach
2 eggs
1/2 c. milk
1/2 c. mayonnaise
8 oz. cheese, shredded (use gruiere cheese or Weight Watchers brick cheese)
2 tbsp. flour

Beat together eggs, milk, mayonnaise and flour. Add chopped spinach and cheese. Pour into pie crust. Bake at 350 degrees for 45 minutes or until top of quiche is brown.
