SPINACH QUICHE 
1 sm. (8 oz.) Mozzarella cheese
1 lb. Ricotta cheese
6 eggs
1 pkg. frozen spinach, thawed
1 clove garlic
1/2 c. bread crumbs

In a bowl mix Ricotta and Mozzarella cheese and eggs together well. Add salt and pepper to taste. Saute spinach and crushed garlic in 1 tablespoon butter until its heated well. Add to cheese mixture. Add 1/2 cup bread crumbs and mix again. Put in a quiche dish and bake at 350 degrees for 1/2 hour (until slightly brown on top).
