CREAMY RICE PUDDING 
1/2 c. raw, long-cooking rice
1 qt. milk
1/4 tsp. salt
1/2 c. sugar
Lump of butter
Raisins, optional
2 med. eggs, slightly beaten
1 tsp. vanilla

Steam rice, milk and salt in double boiler, stirring occasionally, for 1 hour. Add sugar, butter and raisins if desired. Steam 1/2 hour longer. Remove from heat and fold in eggs and vanilla. Cool. Delicious if served with a sprinkle of cinnamon and dollop of Cool Whip.
