NANNA'S CREAMY RICE PUDDING 
3/4 c. rice
1/2 tsp. salt
5 c. milk
1/2 c. sugar
2 egg yolks
1 tsp. vanilla
2 egg whites, stiffly beaten

Place rice, salt, and milk in top of a double boiler. Cook over hot water 1 1/2 hours. Add sugar and egg yolks. Place directly over heat and let boil up once, being careful that the mixture doesn't scorch. Cool and fold in vanilla and egg whites.
