BEEF CASSEROLE 
1 lb. ground beef
1/2 c. chopped onion
1/2 c. chopped green peppers
1 clove garlic, minced
2 (8 oz.) cans tomato sauce
2 tsp. chili powder
1 tsp. salt
3 c. hot cooked rice
1 can pinto beans
1 can crushed corn chips
1 c. shredded cheese

Brown meat then drain. Stir in onions, green peppers and garlic. Continue to saute until vegetables are tender. Blend in tomato sauce, chili powder and salt. In a lightly buttered 1 quart casserole, layer the cooked rice, pinto beans and meat sauce, beginning and ending with meat sauce. Sprinkle with corn chips and bake at 350 degrees for 15 minutes. Sprinkle with cheese and bake for 5 minutes more.
