BEEF OLE CASSEROLE 
1 lb. ground beef, cooked and drained
1/2 c. chopped green pepper
2 tsp. chili powder
3 c. cooked rice
15 oz. can pinto beans
1 c. crushed corn chips
1/2 c. chopped onion
1 clove minced garlic
16 oz. tomato sauce
1/2 tsp. salt
1 c. shredded Cheddar cheese

Combine meat, onion, green pepper, tomato sauce, salt, and chili powder. In a greased 2 quart casserole, layer the rice, beans, and meat sauce. Begin and end with the sauce. Sprinkle with the corn chips. Bake at 350 degrees for 15 minutes. Sprinkle with shredded cheese and bake 5 minutes. Makes 6 (1 cup) servings.
