FRESH LAMB LIVER 
1 very fresh lamb liver, cut into bite size pieces
1/2 c. chopped parsley
1/2 c. chopped scallions
1/2 tsp. salt
1/2 tsp. black pepper

Wash liver very well, drain. Chop into bite sized cubes. Cover with parsley, scallions, salt, and pepper. Mix well. Refrigerate. Serve raw with toasted Lebanese bread.
