TATER DIPPED OVEN FRIED FISH 
2 eggs, slightly beaten
1/4 c. water
2 lbs. dressed whole fish fillets or steaks
Salt & pepper
2 c. mashed potato flakes
1/2 c. butter
2 tbsp. lemon juice

Combine eggs and water. Dip fish in mixture. Sprinkle with salt and pepper. Roll in dry potato flakes. Melt butter in large shallow baking pan. Stir in lemon juice. Add fish. Bake, uncovered at 400 degrees for 25 to 30 minutes. Turn once after 15 minutes.
