OVEN - FRIED FISH 
20 oz. white fish fillets (4 5-oz. pieces)
1/2 c. low-fat buttermilk
1/2 c. Melba toast crumbs
Vegetable coating spray
1 tsp. paprika
2 tbsp. fresh parsley, minced

Put buttermilk in a shallow bowl. Mix crumbs, parsley and paprika and put in a shallow bowl. Dip fish fillets in buttermilk, then in crumb mixture. Place on a baking sheet that has been sprayed with vegetable coating spray. Bake at 450 degrees for 12 minutes or until fish flakes easily. Makes 4 servings, 149 calories each.
