FETTUCINI 
1/2 lb. fettucini
1 tbsp. vegetable oil
2 tbsp. sweet butter
1/2 c. freshly grated Parmesan cheese
Freshly grated black pepper
1/2 c. heavy cream, heated to simmering point
Another 1/4 c. freshly grated Parmesan cheese

Bring approximately 8 cups of salted water to a boil. Add oil to prevent noodles from sticking together. Drop the noodles into rapidly boiling water and boil for 8 minutes. Taste 1 to be sure it is tender. Drain the noodles through a colander; do not rinse them. Return noodles to the saucepan and place over gentle heat. Toss the butter, cheese, and pepper into the noodles, lifting the noodles and turning them over and over until they are well coated with the cheese. Add the simmering cream and fold into the cheese noodles. Sprinkle with more cheese and serve immediately. Ample portions for 2 people.
