EASY ITALIAN CHEESECAKE 
1 box yellow cake mix
1 pkg. instant vanilla pudding
2 lbs. Ricotta cheese
1 c. sugar
4 eggs
Powdered sugar
Fruit (fresh or canned) for garnish

Preheat oven to 350 degrees. In large bowl mix cake mix as stated on box, then add the vanilla pudding. In separate bowl mix Ricotta cheese, sugar and eggs.

Flour and grease a large cake (13 1/2 x 9) or lasagne pan. Pour in cake mixture, then spoon in the cheese mixture to all parts of the pan. Swirl or marble through with knife slightly (once).

Bake for 1 hour or until golden brown. Cool, then refrigerate overnight. Garnish with powdered sugar and strawberries or any fresh or canned fruit.
