ITALIAN CHEESE CAKE 
2 lb. ricotta
3/4 c. sugar
3 eggs, slightly beaten

Mix above together and set aside.

1 box lemon, white, or yellow cake mix with pudding

Mix according to directions on box. Add 2 tablespoons lemon juice. Put in 9 x 13 greased and floured pan.

With large spoon, gently place cheese mixture on cake mixture. Spread lightly.

Bake 60 to 65 minutes at 350 degrees.

When ready to serve, sprinkle with powdered sugar.

Makes 12 generous servings.
