APPLE POUND CAKE 
1 1/2 c. corn oil
2 c. sugar
3 eggs
2 tsp. vanilla
3 c. all-purpose flour
1 tsp. baking soda
Apple Cider Glaze (opt.)
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. finely chopped, peeled apples
1 c. chopped nuts
1/2 c. golden raisins

Beat oil, sugar, eggs and vanilla until well blended. Combine dry ingredients and add to sugar mixture, beating well. Stir in apple, nuts and raisins. Spoon batter into a greased and floured 10 inch tube pan or bundt pan. Bake at 325 degrees for 1 hour and 15 minutes or until done. Let cake cool in pan 10 minutes before removing from pan. If desired, prick top of cake with a fork and drizzle on Apple Cider Glaze.

APPLE CIDER GLAZE:

1/2 c. apple cider or juice
1/4 c. brown sugar, packed
1/2 c. applejack
2 tbsp. butter

Combine all ingredients in a small saucepan and bring to a boil, stirring until sugar is dissolved - about one cup.
