APPLE POUND CAKE 
1 1/2 c. corn oil
3 c. all-purpose flour
3 eggs
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. apples, finely chopped
1/2 c. golden raisins
2 c. sugar
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
1 c. chopped nuts

Beat oil, sugar, eggs, and vanilla until well blended. Combine dry ingredients and add to sugar mixture, beating well. Stir in apples, nuts, and raisins. Spoon batter into a greased and floured 10 inch tube pan or bundt pan. Bake at 325 degrees for 1 hour and 15 minutes or until cake is done. Let cake cool in pan 10 minutes before removing. If desired, poke holes in top of cake with a fork and drizzle on apple cider glaze.
