BANANA MUFFINS 
1 3/4 c. flour
3/4 c. sugar
1 1/4 tsp. cream of tartar
3/4 tsp. baking soda
1/2 tsp. salt
2 ripe bananas, mashed
2 eggs, beaten
1/2 c. vegetable oil
3/4 c. chopped pecans

Combine first five ingredients; add to wet ingredients; stir just until moistened. Spoon batter into greased muffin pans, filling 3/4 full. Bake at 400 degrees for 18 minutes or until golden brown. Yield: 1 1/2 dozen.
