BANANA NUT MUFFINS 
2 1/2 c. oat bran cereal
1 tbsp. baking powder
1/4 c. brown sugar
1/4 c. chopped pecans or walnuts
1 c. raisins (optional)
1 1/4 c. skim milk
2 very ripe bananas, mashed
2 egg whites
2 tbsp. vegetable oil

Mix first 4 ingredients. Add milk, bananas, oil and egg whites, mix. Add to the dry ingredients and mix together. Use paper cups in muffin tin and fill with batter. Bake at 425 degrees for 17 minutes. Makes 12 muffins. Can be frozen and taken out as needed.
