MUSHROOM RICE 
1/2 stick butter, melted
1 med. onion, chopped fine
1 sm. can mushrooms, undrained
1 c. rice
1/2 can chicken broth
1 tbsp. Italian grated cheese
1 egg

Simmer onion and mushrooms in butter for 10 minutes. Boil rice, but do not cook thoroughly. Strain and add to preceding mixture. Add 1/2 can chicken broth and 1 tablespoon Italian grated cheese. In small bowl, beat egg and drop in rice mixture and stir until egg is cooked, about 5 minutes. Good with any meat or chicken dish.
