MUSHROOM SOUP WITH POPPED WILD
RICE
 
1/2 c. uncooked wild rice
1 c. water
1/4 c. butter
1 (12 oz.) pkg. fresh mushrooms, sliced
1 sm. onion, chopped
1/4 c. flour
2 c. chicken broth
2 c. Half & Half

In small saucepan rinse rice until clean in cold water. Add 1 cup cold water and simmer rice for 40 minutes. In fry pan, simmer mushrooms in hot butter. Add onion. Simmer 1 minute. Stir in flour until blended. Stir in chicken broth until mixed. Stir until mixture thickens. Stir in Half & Half. Add wild rice to mixture.
