CAULIFLOWER AU GRATIN 
1 med. head cauliflower
1 1/2 c. white sauce
3 tbsp. diced pimento
3 tbsp. diced green pepper
1/4 c. soft bread crumbs
1/4 tsp. salt
1/2 c. grated Cheddar cheese
2 tbsp. butter

Separate cauliflower into flowerets. Cook in boiling salt water until tender, drain. Place in buttered dish. Mix white sauce with pimento, green pepper, and salt; pour over cauliflower. Mix crumbs and cheese. Sprinkle over sauce. Dot with butter. Bake 10-15 minutes at 350 degrees or until golden brown.
