CAULIFLOWER AU GRATIN 
1 med. head cauliflower
2 tbsp. melted butter
2 tbsp. flour
1 1/2 c. milk
1/2 tsp. salt
1/4 tsp. white pepper
1 c. grated Parmesan cheese
1 c. shredded Swiss cheese
1/2 c. chopped ham
1/2 c. bread crumbs
1/4 c. melted butter

Cook cauliflower in small amount of boiling sauteed water, about 10 minutes. Drain. Place in 2-quart casserole. Keep warm.

Combine 2 tablespoons butter and flour. Cook over low until bubbly. Gradually add milk, cook, stirring constantly until smooth and thickened. Season with salt and pepper. Add cheese, stirring until melted. Add ham. Spoon sauce over cauliflower.

Saute bread crumbs in 1/4 cup butter until golden. Spoon over sauce. 4 servings.
