LOU'S TEXAS CHILI | |
3 to 4 lbs. cut stew meat 1 lg. onion, chopped 2 cloves garlic, chopped 1 (15 oz.) can whole tomatoes (or 4 to 5 fresh) 3 tbsp. chili powder 1 tbsp. oregano 1 tbsp. cumin 1 tsp. salt 1 tsp. cayenne pepper 1 tsp. paprika 3 to 5 chili pods 2 heaping tbsp. flour Saute meat until grey with onion and garlic. Add all other ingredients - EXCEPT FLOUR. Simmer over low heat about 1 1/4 hours. Mix flour with water to make runny paste. Add to mixture. Simmer another 30 to 45 minutes. Serves 6 to 8. |
