ESCALLOPED CABBAGE 
1 head cabbage
Shredded sharp Cheddar cheese
White Sauce (recipe follows)

Cut cabbage into 1 1/4 inch cubes. Parboil it with 3 tablespoons water until it looks clear but crisp. Drain. In a greased casserole dish, layer cabbage, white sauce and shredded cheese, ending with cheese on top. Bake 45 minutes at 350 degrees.

WHITE SAUCE:

1 stick butter
1/2 tsp. salt
1/2 c. flour
2 c. milk

Melt butter, add flour and salt. Mix well, gradually add milk stirring constantly until mixture boils. Turn heat down and let simmer 10 minutes.
