ALMOND CHICKEN STIR-FRY 
STIR FRY SAUCE:

1 tbsp. soy sauce
1 tbsp. water
1 tsp. sugar
1 tsp. cornstarch
1 tsp. vinegar

OTHER INGREDIENTS:

1 lb. julienned chicken
1 tbsp. soy sauce
1/2 lb. snow peas, trimmed
1/2 c. slivered almonds
1 tsp. minced garlic
1 tsp. grated ginger root
1 lb. sliced mushrooms

Marinate chicken in 1 tablespoon soy sauce. Combine ingredients for stir fry sauce; set aside.

Blanch snow peas for 10 seconds; drain, cut diagonally and set aside. Add 1 tablespoon oil to wok and stir fry almonds, 2-3 minutes. Remove almonds and set aside.

Add 1 tablespoon oil, garlic and ginger root to wok; stir fry 1 minute. Add chicken and stir fry, 1 minute. Add mushrooms and stir fry sauce and stir fry 5 minutes. Add snow peas and almonds and stir fry 2 minutes. Serves 4, 355 calories.
