CHICKEN ALMOND STIR FRY 
1 tbsp. oil
1 sm. garlic, crushed
1 c. diced raw chicken, white meat
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. sugar
1 tbsp. soy sauce
1/4 c. sliced toasted almonds
1 c. diced celery
1/4 c. sliced mushrooms
1/4 c. green pepper strips
1/2 c. chicken broth
1 tbsp. cornstarch
2 tbsp. water

Heat oil in moderately hot frying pan. Add garlic, chicken, salt, pepper, sugar and soy sauce. Stir fry until chicken is light colored. Add celery, mushrooms, green pepper strips and chicken broth. Cook 5 minutes; stir and cook 3 minutes more.

Mix cornstarch with water and add to the ingredients. Cook stirring until thickened. Add almonds just before serving. Serve over cooked rice if desired. 4 servings.
