COUNTRY CHICKEN 
Chicken pieces, preferably boneless breasts
Sausage, sweet and hot, as preferred
Potatoes
Vinegar peppers
Mushrooms; optional

Cut up sausage; brown in frying pan in small amount of olive oil. Remove; cut 3-4 potatoes in thick round slices. Brown in sausage drippings. Remove.

Cut up boneless chicken pieces. Brown in same drippings. Also mushrooms. When chicken and mushrooms are brown put sausage back in pan. Add cut up vinegar peppers. Simmer 1 hour. If dry, add some of liquid from vinegar pepper or white vinegar. Add potatoes; simmer additional 20 minutes.

This can also be done in oven. Just brown sausage, chicken, potatoes as above; put all ingredients in baking dish and cook at 350 degrees for 1 hour.
