COUNTRY CHICKEN 
4-5 med. potatoes (cut into bite size chunks)
1 lb. hot Italian sausage (cut into 1 1/2 inch pieces)
1 tbsp. salad oil
1 (2 1/2 - 3 lb.) broiler/fryer, cut up (or boneless, skinless - makes it
so easy!)
1 lg. onion, quartered and separated
1/2 c. water
1/2 tsp. salt
1/2 tsp. oregano leaves
1 (10 oz.) pkg. frozen whole green beans (or substitute your favorite veggie)

Oven 425 degrees.

About 1 hour before serving: In large open roasting pan, mix potatoes, sausages and oil. Bake in 425 degree oven for 15 minutes. Cut each piece of chicken breast in 1/2, add with next 5 ingredients to pan, tossing to mix. Bake 15-20 minutes.

Separate frozen vegetables under warm water, drain on paper towels. Sprinkle vegetables over chicken mixture; bake 15-20 minutes longer until chicken and vegetables are tender, stirring occasionally. Makes about 6 servings.
