COUNTRY CHICKEN 
4 potatoes, cut in large pieces
1 lb. Italian sausage, cut in 2-3 pieces
2 1/2-3 lb. chicken, cut up
1/2 tsp. salt
1 tsp. oregano
4 peppers, cut in slices
16 oz. fresh mushrooms, sliced
1 onion, quartered

Heat oven to 450 degrees for 15 minutes. In large roasting pan, put tablespoon of salad oil. Mix potatoes and sausage in oil. Bake for 15 minutes. Then add chicken pieces, salt, peppers, onion, mushrooms and oregano. Bake uncovered for 1 to 1 1/2 hours. Tossing to mix ingredients.
