SWEET AND SOUR CHICKEN 
1/4 c. vinegar
1 tbsp. cornstarch
1 tbsp. water
1/2 c. sugar
1/2 c. low sodium soy sauce
1 clove garlic, minced
1/2 tsp. pepper
1/2 tsp. ginger
5-6 fryer parts
Lg. can pineapple chunks, drained

In a small saucepan, mix the first 8 ingredients and simmer until thick. Place chicken into a covered baking dish. Pour sauce over chicken and bake at 425 degrees for 1/2 hour. Turn chicken and bake 1/2 hour more. Add pineapples 10 minutes before chicken is done. Serve over rice.
