SWEET CHERRY SALAD 
2 (16 oz.) cans pitted dark sweet cherries, undrained
1 (6 oz.) pkg. cherry flavored gelatin
3/4 c. port or sweet red wine or apple juice
2/3 c. chopped pecans
Lettuce leaves
Mayonnaise or salad dressing

Drain cherries and reserve liquid. Cut cherries in half; set aside. Add enough water to liquid to a boil; remove from heat. Add gelatin; stir until it dissolves. Stir in port wine. Chill until the consistency of unbeaten egg white. Fold in cherries and pecans. Spoon mixture into a lightly oiled 6 cup mold; cover and chill until firm. Unmold onto a lettuce lined plate. Serve with mayonnaise. 10 servings. Use yogurt instead of mayonnaise if you want.
