SWEET 'N SOUR PORK 
1 lb. pork tenderloin, cut into bite size pieces
1 tbsp. vegetable oil
1 sm. onion, finely chopped
1/2 c. vinegar
1 tbsp. cornstarch
1/4 tsp. ginger
1/2 c. currant jelly
1 sm. green and red pepper, cut into strips
8 oz. pineapple chunks

Brown pork well in oil. Add onion; cover and simmer 20 minutes (always cook pork thoroughly). Combine vinegar, cornstarch, and ginger; add with jelly and pepper strips to pork and onion. Bring to a boil, stirring. Cover and simmer 5 minutes. Add pineapple and heat through. Serve with Chinese fried rice or plain rice. This is an excellent dish.
