OAT-APPLE COFFEE CAKE 
1 1/2 c. reg. oats (uncooked)
2/3 c. sugar
1/3 c. softened butter
1 c. buttermilk
1 egg
3/4 c. all-purpose flour
1/2 c. whole-wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1 lg. (1/2 lb.) apple, peeled, cored and thinly sliced
Vegetable cooking spray
Orange Glaze

Combine oats, sugar, butter, buttermilk and egg in a large bowl; stir well. Combine flour, baking powder, baking soda, cinnamon and nutmeg; add to oat mixture, stirring just until blended. Spoon batter into a 9 x 13 x 2-inch baking pan that has been coated with vegetable cooking spray. Press apple slices into batter to make evenly spaced rows. Bake at 375 degrees for 35 to 45 minutes or until wooden pick comes out clean when inserted. Let cool 15 minutes. Drizzle with orange juice glaze.

ORANGE GLAZE:

1 c. powdered sugar, sifted
1 tbsp. plus 2 tsp. orange juice

Combine sugar and juice in small bowl; stir until smooth.
