APPLE BREAKFAST CAKE 
1 1/4 c. Nabisco 100% Bran
1 1/2 c. unbleached flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. pumpkin pie spice
1 1/2 c. firmly packed brown sugar
1/2 c. corn oil
3/4 c. cholesterol-free egg product
2 tsp. vanilla extract
2 c. shredded zucchini
1 c. chopped apple
Confectioners Sugar Glaze (recipe follows)

Grease and flour a 13 x 9 x 2 inch baking pan. Preheat oven to 350 degrees. Mix bran, flour, baking powder, baking soda and pumpkin pie spice. With mixer, beat brown sugar, oil, egg product and vanilla until smooth. Stir in zucchini, apple and bran mixture. Spread batter in pan. Bake for 35-40 minutes or until toothpick inserted comes out clean. Cool in pan 10 minutes. Drizzle with Confectioners' Sugar Glaze; cut into squares to serve. Yield 24 servings.

Confectioners' Sugar Glaze: Blend 2 teaspoons water into 1/3 cup confectioners' sugar.
