MOIST APPLE CAKE 
3 eggs
2 c. sugar
1 c. vegetable oil
3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3 c. peeled, finely chopped apples
1/2 c. chopped pecans

Combine eggs, sugar and oil in a large mixing bowl, beat well.

Combine flour, salt, soda and cinnamon. Add to sugar mixture and beat well. Stir in apples and pecans. Mixture will be stiff.

Spoon into a greased and floured 10 inch tube pan. Bake at 350 degrees for 1 hour and 20 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10-15 minutes. Remove from pan and let coo. Drizzle with brown sugar glaze.

BROWN SUGAR GLAZE:

1/4 c. firmly packed brown sugar
2 tbsp. butter
1 tbsp. evaporated milk

Combine all ingredients in a heavy saucepan. Bring to a boil and cook stirring constantly for 2 minutes. Let cool to lukewarm. Drizzle on cake.
