POTATO PUFFS 
1 1/2 c. seasoned mashed potatoes, chilled
3 eggs, beaten to blend
3 generous tbsp. flour
2 tbsp. minced onion
1 tbsp. baking powder
3/4 tsp. onion powder
3/4 tsp. garlic powder
3/4 tsp. salt
Vegetable oil
Sour cream
Applesauce

Blend first 8 ingredients in large bowl. Heat 1/2 inch oil in heavy large skillet over medium-high heat. Drop batter by tablespoons into oil and cook until crisp and golden brown, about 4 minutes per side.

Remove with slotted spoon and drain on paper towels. Serve immediately. Pass sour cream and applesauce separately.
