CHOCOLATE CUPCAKES 
1 1/2 c. flour
1 tsp. baking soda
1 c. sugar
1 tsp. salt
4 tbsp. cocoa
1 tsp. vanilla
1 tbsp. vinegar
1/3 c. oil
1 c. cold coffee

In a bowl mix the flour, soda, sugar, salt, and cocoa with a fork only. Add the vanilla, vinegar, oil, and coffee. Again using only a fork; mix well. Use liners in cupcake tins or it may be baked in a Pyrex loaf pan. Bake for 25 minutes in a 375 degree oven.
