PETITE APPETIZER PUFFS | |
1 c. water 1/2 c. butter 1 c. sifted flour Dash salt 4 eggs 1/2 c. finely chopped dried beef 1/4 c. grated Parmesan or Romano cheese Bring water and butter to boil, stirring until butter melts. Add flour and salt all at once. Cook, stirring constantly over low heat until mixture is smooth and clings together, 1 to 2 minutes. Remove from heat and cool slightly. Add eggs, one at a time, beating well after each addition, until batter is smooth and shiny. Turn half of batter into mixing bowl. Stir dried beef into half of batter and cheese into remaining half. Drop by teaspoonfuls onto lightly greased baking sheet. Bake at 400 degrees for 20 to 25 minutes. Serve warm. Makes 9 dozen. |
