PETITE CHEESECAKES 
2 (8 oz.) creamed cheese, softened
3/4 c. sugar
1 egg
1 tbsp. lemon juice
1 tbsp. vanilla
Blueberry or cherry pie filling
Vanilla wafers

Beat creamed cheese, sugar and egg until smooth and creamy. Add lemon juice and vanilla. Place liners in muffin tins. Place a vanilla wafer in the bottom of each liner. Spoon cheese mixture over wafer (3/4 full).

Bake at 325 degrees for 1 hour. Makes 12 regular size or 24 petite size (petite size should bake 45 minutes). Remove from oven and let cool. Remove liners. Top with pie filling.
