PETITE CHERRY CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
1 tbsp. lemon juice
1 can cherry pie filling
2 eggs
1 tsp. vanilla extract
1 box vanilla wafers

Beat together cream cheese, eggs, sugar, vanilla and lemon juice until fluffy. Place one vanilla wafer in a foil muffin cup. Fill each muffin cup 2/3 full. Bake at 375 degrees 15-20 minutes or until set (not browned). Remove from oven and top with pie filling. Chill before serving. NOTE: Be sure to use foil cups; paper is too flimsy.
