GERMAN APPLE PANCAKE 
3/4 c. sifted flour
3 eggs
3/4 c. milk
1 tbsp. butter

FILLING:

4 tbsp. butter
1/8 tsp. nutmeg
4 lg. apples, thin slices
1/2 tsp. cinnamon
1/4 c. brown sugar

Mix together eggs and milk. Sift in flour, beating until smooth. Heat 10" iron frying pan, or other oven proof pan, with one tablespoon of butter. When butter is melted, pour flour mixture into heated pan and bake in 450 degree preheated oven for 15 minutes. Check and see that large bubbles have formed. Reduce heat to 350 degrees and continue to bake for 10 more minutes.

Melt butter and add additional ingredients. Stir together and reduce heat to low. Cover and cook over low heat until apples are soft. Remove pancake from oven and fill with apple mixture.
