POTATOES AND MUSHROOMS 
8-10 sm. new potatoes
1/4 c. butter, melted
2 tbsp. green onions or chives, chopped
1/2 lb. mushrooms, chopped
1 c. meat stock
2 egg yolks
1 tsp. lemon juice
Salt and pepper

Cook potatoes in jackets until tender. Drain and dry. Place in a casserole dish, adding butter and chopped onion. Beat egg yolks and add lemon juice, mushrooms, and meat stock. Season with salt and pepper. Pour over potatoes in casserole dish. Bake uncovered in preheated 350 degree oven for 30-40 minutes.
