FRENCH ONION CASSEROLE 
4 med. onions, sliced
3 tbsp. butter
2 tbsp. flour
Dash of pepper
3/4 c. beef bouillon
1/4 c. dry sherry
1 1/2 c. croutons
2 tbsp. butter, melted
1/2 c. shredded Swiss cheese
3 tbsp. grated Parmesan cheese

Cook onions in melted butter until tender. Continue cooking until they turn golden brown. (This can be helped along by adding a pinch of sugar.) Blend in flour and pepper. Add bouillon and sherry. Cook and stir until thick. Turn into a 1-quart casserole. Can be made ahead to this point.

Toss croutons with 2 tablespoons of melted butter and spoon over onion mixture. Sprinkle with Swiss and Parmesan cheese and place under broiler until cheese melts. Serve immediately.

This was great! I was planning on making this for Thanksgiving and did a test run today (the 19th of Nov) and it's really yummy! I really liked it as is, but for the big day I'll make the following changes - I want to mix some cheese in with the onions, and then top with more, and bake at 350°F for a while to melt it, then crank the broiler, and to make eating easier and less messy, I'll cut the onions up a little smaller. All in all a great recipe, VERY tasty.
