FRENCH ONION CASSEROLE | |
4 med. onions, sliced 3 tbsp. butter 2 tbsp. flour Dash of pepper 3/4 c. beef bouillon 1/4 c. dry sherry 1 1/2 c. croutons 2 tbsp. butter, melted 1/2 c. shredded Swiss cheese 3 tbsp. grated Parmesan cheese Cook onions in melted butter until tender. Continue cooking until they turn golden brown. (This can be helped along by adding a pinch of sugar.) Blend in flour and pepper. Add bouillon and sherry. Cook and stir until thick. Turn into a 1-quart casserole. Can be made ahead to this point. Toss croutons with 2 tablespoons of melted butter and spoon over onion mixture. Sprinkle with Swiss and Parmesan cheese and place under broiler until cheese melts. Serve immediately. |
