EUROPEAU ERDBEER -- SUPPE
(Strawberry Soup)
 
3 pt. fresh strawberries or 1 1/2 pkg. frozen (30 oz.)
3 tbsp. honey
2 1/2 tbsp. cornstarch
1/2 c. orange juice, fresh or frozen
2 tbsp. honey
1/2 c. sour cream or yogurt

Wash, slice enough strawberries to make 3 3/4 cups. Add honey and stir well to coat berries evenly. Set aside for an hour or so. If using frozen berries, slice them, drizzle honey over them completely. Drain berries (should have 1 1/2 cups juice and 2 1/4 cups berries). Put juice in blender, add half of the berries to make a very liquid puree. Heat puree to boiling point.

Dissolve cornstarch in orange juice, stir in boiling puree, cook 1-2 minutes until mixture is thick and clear. Cool slightly, add honey and remaining berries. Chill completely and serve with sour cream or yogurt on top of each bowl. A treat on hot days!
