MOM'S CUCUMBER SALAD 
1 lg. box lime Jello
1 med. sized cucumber
2 green onions
2 tbsp. apple cider vinegar
1 (8 oz.) pkg. cream cheese

Prepare lime Jello according to directions on box using 1/4 cup less cold water. While water is boiling for Jello, peel, remove seeds and finely dice cucumber. Slice green onion tops into thin rings, set aside. In large microwave safe mixing bowl, soften cream cheese in microwave on high for 1 minute. Finish Jello by adding vinegar and water to cooled Jello, stir. Add Jello to cream cheese, 1/2 cup at a time (otherwise, the cheese will not blend completely with Jello.) Stir with a whisk each time to blend. Add cucumbers and onions. Pour into a mold. Chill until set. Serve garnished with parsley and tiny salad tomatoes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
