ITALIAN ZUCCHINI SAUTE 
3 tbsp. sweet butter
3 c. unpeeled zucchini, sliced 1/8 inch
1/4 c. sliced green onion
1/4 tsp. salt
1/2 tsp. basil
1 med. tomato, cubed 1/2 inch
1/4 c. shredded Mozzarella cheese
1/4 c. grated Parmesan cheese

In medium skillet, melt butter over medium heat. Stir in zucchini, onion, basil, and salt. Cook, stirring occasionally, until zucchini is crisp-tender (10 to 20 minutes). Stir in tomato and cook 1 minute. Sprinkle with cheese. Cover. Let stand 1 minute or until cheese is lightly melted. Serves 6.
