CUPID'S CHEESECAKE 
8 sq. semi-sweet chocolate
3 pkg. (3 oz. each) cream cheese, softened
1/4 c. sugar
1/4 c. butter, softened
1 tsp. vanilla extract
1 c. chilled whipping cream
Almond crust (see crusts)

Place semi-sweet chocolate in small microwave safe bowl. Microwave at high 1-1 1/2 minutes or until chocolate is melted and smooth. Set aside; cool to lukewarm.

In large bowl, beat cream cheese, sugar and butter until smooth. On low speed, blend in melted chocolate. In small bowl, beat cream until stiff; fold in chocolate mixture. Spoon into cooled crust. Cover; chill until firm. Yields about 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
